1.Clean up the meat, mince well. Marinate with salt, starch and cooking wine for about 5 minutes. Wash the eggplant, cut well. Heat up a wok with oil, add the eggplant and deep frying for a while until they turn soft. Remove the eggplant and drain well, set aside.
